Topless cherry blueberry pie

In delicious on Sunday, 7 August, 2011 at 0:26

Quick, while I remember: one pound each frozen blueberries and cherries, 1/4 cup cornstarch, the zest of one lemon and 3 T of its juice, 1/3 cup white sugar, and 1/3 cup brown sugar. The filling was brought to a boil while being stirred constantly, then was removed from heat. It got nice and thick, even moreso upon cooling. Having cooled a little, it was then put into a freshly baked single homemade pie shell. Upon slicing the thing, the filling stayed perfectly in place, it didn’t ever touch the bottom of the dish. That’s perfect consistency. For once, I got to eat it at the time it was done, extra flaky since it was still warm. It also works just as well cold for breakfast, with coffee or pear green tea.

Two people creating is much more satisfying than one.

I like the fancy dish (which is not mine), it greatly added to the presentation.

I had trouble/was picky with the lighting, so I turned down the brightness for this one. Maybe I shouldn't have. Still delicious, though.
